5 Bean Chilli
- 1.5 tbsp olive oil
- 1 sliced onion
- 2 green peppers, sliced
- 2 crushed garlic cloves
- 1 tbsp each of cumin and coriander
- 2 tsp smoked paprika
- 400g tin of chopped tomatoes
- 400g tin of mixed beans
- 400g tin of black beans
- Pinch of sugar
- 250g brown rice, cooked to serve
- ½ bunch of coriander, chopped
- Heat the oil in a casserole dish, and fry the onion and peppers for 10 mins to soften. Add the garlic and spices, and fry for a minute. Pour in all the beans and tomatoes, 50ml of water and the sugar and seasoning. Simmer for 20 mins to thicken. Serve with rice and coriander.
