5 Bean Chilli

  • 1.5 tbsp olive oil
  • 1 sliced onion
  • 2 green peppers, sliced
  • 2 crushed garlic cloves
  • 1 tbsp each of cumin and coriander
  • 2 tsp smoked paprika
  • 400g tin of chopped tomatoes
  • 400g tin of mixed beans
  • 400g tin of black beans
  • Pinch of sugar
  • 250g brown rice, cooked to serve
  • ½ bunch of coriander, chopped
  • Heat the oil in a casserole dish, and fry the onion and peppers for 10 mins to soften. Add the garlic and spices, and fry for a minute. Pour in all the beans and tomatoes, 50ml of water and the sugar and seasoning. Simmer for 20 mins to thicken. Serve with rice and coriander.
