Apple and Horseradish Oysters
- 24 live oysters, shucked
- 3 tbsp white wine vinegar
- 2 tbsp chopped shallots
- 1 tsp honey
- 4 tbsp olive oil
- 2 tbsp chopped green apple
- 1.5 tbsp grated horseradish
- 1 tsp crushed peppercorns
- Mix together the shallots and vinegar in a small bowl, and leave to sit for an hour or so. Add all of the other ingredients (minus the oysters), stir well, and put in a serving bowl. Serve the shucked oysters in the half-shell on a bed of ice, with the dressing alongside to be spooned over the shellfish.
