Apple and Potato Fritters

  • 500g peeled and grated potatoes
  • 100g grated apple
  • 2 sliced shallots
  • 1 tsp salt flakes
  • 1 tsp coriander seeds
  • 3 heaped tbsp self-raising flour
  • 2 eggs
  • Handful of chopped parsley
  • Veg oil for frying
  • Add the grated apple and potato to a colander with the shallots and salt. Leave for 20 mins, then squeeze to remove the excess liquid. Place the mixture into a bowl and add the remaining ingredients, season well, then mix lightly to combine.
  • Heat a decent amount of oil in a frying pan to sizzling temperatures, and place dollops of the fritter mixture in the oil. Fry until golden and crispy, then flip and fry on the other side. Drain on kitchen paper, and serve warm with apple chutney.
