Arabian-Style Barramundi
- 2 x 350g barramundi, cleaned
- For the Dressing
- ½ tsp each of cumin and coriander
- Pinch of paprika and chilli powder
- 2 chopped garlic cloves
- 1 lemon, juice only
- 5 tbsp olive oil
- Small bunch of chopped coriander
- Tip the dressing ingredients into a food processor with some seasoning. Blitz to a dressing. Slash the skin of the fish three times on each side, and coat with half the dressing. Marinate in the fridge for 30 mins.
- Heat the oven to 220C. Place the fish on a roasting tray, and cook for 20 mins or until cooked through. Serve with the rest of the dressing and some steamed rice - delicious!
