Asian Crab Fried Rice

  • 1 tbsp oil
  • 300g cooked rice, cold from the fridge
  • 100g chopped broccoli
  • 1 grated carrot
  • 2 chopped garlic cloves
  • 2 chopped spring onion
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 2 eggs
  • 100g white crab meat
  • ½ bunch of basil, leaves picked and torn
  • Heat the oil in a wok and tip in the broccoli and rice. Cook for 5 mins, tossing often, until the rice is starting to turn golden. Add the garlic, spring onions and carrots, and fry another 5 mins.
  • Pour in the oyster sauce and soy sauce, toss well and leave for 2 mins. Make a well in the mixture, break in the eggs and leave the bottom to set. Stir and cook, breaking into chunky pieces with a wooden spoon, then fold in the crab meat and cook until warmed through. Scatter with torn basil, and serve with more soy sauce for drizzling.
