Asian Salmon Noodles
- 4 x 125g skin-on salmon fillets
- 1 tbsp hoisin sauce
- 150g medium egg noodles
- 100g snow peas
- 200g long stem broccoli, trimmed
- Soy sauce, to serve
- Preheat the oven to 220C and line a shallow oven dish with foil. Place the salmon fillets in the dish, skin-side down, and brush with hoisin sauce and seasoning before cooking for 15 mins.
- Boil the noodles for 1 minute, then add the broccoli and snow peas to the pan and cook for 3 mins more. Drain and divide the noodles and vegetables between plates, then top with the salmon fillets and sprinkle with soy sauce and black pepper to serve.
