Asian Steak Salad
- 1 x sirloin steak
- Salt and pepper
- 25ml oil
- 1 red chilli, chopped
- 1 tbsp palm sugar
- 2 sliced cloves of garlic
- 2 tbsp chopped coriander
- 2 tbsp fresh mint, chopped
- 1 tbsp soy sauce
- 1 tsp fish sauce
- 1 lime, zest and juice
- 1 lettuce
- 50g peas
- 6 sliced radish
- Preheat your griddle pan, then season the steak and drizzle with oil. Cook for about 3 minutes on either side, then leave to rest while you prepare the salad.
- Make your dressing by putting the palm sugar, chilli, garlic, and a tsp of salt into your pestle and mortar, and giving it all a good grind for a minute or two. Add the coriander and mint, grind some more, then pour in the fish sauce, soy sauce, lime zest, and juice.
- Slice the lettuce into 6 wedges, and place in a serving bowl. Top with the peas and radishes, a couple of coriander leaves, then pour over your dressing. Toss to coat, then serve with sliced steak on top.
