Avocado and Lime Spaghetti
- 120g spaghetti
- 1 lime, zest and juice
- 1 chopped avocado
- 2 chopped tomatoes
- Small bunch of chopped coriander
- 1 chopped red onion
- 1 chopped red chilli, to taste
- Cook the pasta in boiling salted water until al dente, then drain. Meanwhile, add the lime zest and juice to a bowl and stir in the avocado, coriander, tomatoes, onion and chilli.
- Toss the drained pasta into the bowl with the vegetables and mix well, then serve immediately with some sea salt and black pepper. It will also work well cold as a pasta salad!
