Avocado and Lime Spaghetti

  • 120g spaghetti
  • 1 lime, zest and juice
  • 1 chopped avocado
  • 2 chopped tomatoes
  • Small bunch of chopped coriander
  • 1 chopped red onion
  • 1 chopped red chilli, to taste
  • Cook the pasta in boiling salted water until al dente, then drain. Meanwhile, add the lime zest and juice to a bowl and stir in the avocado, coriander, tomatoes, onion and chilli.
  • Toss the drained pasta into the bowl with the vegetables and mix well, then serve immediately with some sea salt and black pepper. It will also work well cold as a pasta salad!
