Avocado and Prawn Blini Appetizer
- 2 avocados
- 1 lime, juice only
- Tabasco sauce
- 2 sliced spring onions
- 1 tomato, chopped
- 2 tbsp chopped coriander
- 20 blinis
- 20 large cooked and peeled prawns
- Extra coriander, to garnish
- Blitz the avo with the lime juice and a couple of dashes of Tabasco. Transfer to a bowl, stir in the spring onions and tomato, and the coriander leaves. Season well, mix to combine, then spoon on top of your blinis before topping with a shelled cooked prawn. Garnish with coriander - perfect!
