Avocado and Prawn Blini Appetizer

  • 2 avocados
  • 1 lime, juice only
  • Tabasco sauce
  • 2 sliced spring onions
  • 1 tomato, chopped
  • 2 tbsp chopped coriander
  • 20 blinis
  • 20 large cooked and peeled prawns
  • Extra coriander, to garnish
  • Blitz the avo with the lime juice and a couple of dashes of Tabasco. Transfer to a bowl, stir in the spring onions and tomato, and the coriander leaves. Season well, mix to combine, then spoon on top of your blinis before topping with a shelled cooked prawn. Garnish with coriander - perfect!
