Avocado and Red Wine Vinegar Oysters

  • 12 fresh shucked oysters
  • 1 diced avocado
  • 10g diced cucumber
  • 2 finely sliced spring onions
  • 3 tbsp red wine vinegar 2 tbsp olive oil
  • Before you shuck the oysters open, mix the avocado, cucumber, spring onions, vinegar and olive oil in a bowl and lightly season with black pepper. Place the bowl in the fridge for 15 mins.
  • Meanwhile, shuck the oysters and arrange on the half-shell. Top the oysters with a spoonful of the dressing, and serve immediately.
