Avocado and Red Wine Vinegar Oysters
- 12 fresh shucked oysters
- 1 diced avocado
- 10g diced cucumber
- 2 finely sliced spring onions
- 3 tbsp red wine vinegar 2 tbsp olive oil
- Before you shuck the oysters open, mix the avocado, cucumber, spring onions, vinegar and olive oil in a bowl and lightly season with black pepper. Place the bowl in the fridge for 15 mins.
- Meanwhile, shuck the oysters and arrange on the half-shell. Top the oysters with a spoonful of the dressing, and serve immediately.
