Avocado, Pea, and Mint Pasta Recipe
What you'll need:
- 375g penne
- 1 large avocado
- 2 cloves of garlic
- 2 tbsp olive oil
- ½ tsp salt
- 1 lemon, zest and juice
- 6 mint leaves
- 150g peas
- 1 red chilli
Time: 15 mins
Serves: 4
Method
First
Cook the pasta, drain, and set aside. While this is going on, destone the avocado, and take the avocado flesh, garlic, oil, lemon, salt, and mint, and blend with a splash of water, until you get a smooth paste.
Second
Mix the avocado paste into the cooked pasta, and stir in the peas. Grate the red chilli over the top, serve, and enjoy!
