Bacon and Avocado Salad

  • 4 slices of ciabatta, cut into chunks
  • 6 rashers of streaky bacon
  • Olive oil
  • 1 tbsp red wine vinegar
  • 2 tsp mustard
  • 2 handfuls of spinach leaves
  • 1 sliced avocado
  • Preheat the oven to 200C. Toss the pieces of bread in 1 tbsp of oil and some salt and pepper, then bake until golden and crisp. Grill the bacon until cooked and crispy.
  • Meanwhile, whisk the vinegar and mustard with about 2 tbsp of olive oil and some seasoning. Divide the spinach, bacon, avocado and ciabatta croutons between 2 plates. Drizzle over the dressing and serve.
