Bacon and Blue Cheese Gnocchi
- 400g gnocchi
- 5 spring onions
- 150g Danish blue cheese
- 250g mascarpone
- 225g baby spinach leaves
- 50g cooked crispy streaky bacon
- Cook the gnocchi in salted boiling water according to pack instructions. Meanwhile, slice the cheese and spring onions and spoon the mascarpone into a frying pan. Add the cheese and onions, and melt over a medium heat. Stir well, then add the spinach to the mixture to wilt and crumble in half the bacon. Add the cooked gnocchi to the sauce, crumble over the remaining bacon and serve. Yum!
