Bacon, Mushroom, and Goat’s Cheese Salad
- 1 big mushroom, sliced
- 1⁄2 red onion, sliced
- 1 rasher of bacon, fried and sliced
- 1 orange, grated zest only
- 85g goat’s cheese, crumbled
- 2 handfuls of flat leaf parsley, finely chopped
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 3 cloves of garlic, sliced and lightly fried in the bacon fat
- 1 slice of ciabatta, lightly toasted
- Simply mix all of the ingredients (apart from the bread) together in a bowl until really well combined, then pile them up on top of your toasted ciabatta. Simple, yet utterly perfect!
