Baked Feta Brunch
- 100g feta
- Small handful of mint, chopped
- 1⁄2 tomato, sliced
- 1 tsp chilli flakes
- Squeeze of lemon juice
- 1 tbsp olive oil
- Salt and pepper
- 2 tbsp kalamata olives
- Small handful of parsley, chopped
- 1 poached egg, to serve
- Preheat the oven to 180C. Place the cheese, mint, tomato, chilli, and a splash of olive oil on some aluminium foil. Season well, then fold the sides to make a parcel. Squeeze over the lemon, pop it in the oven, and bake for 10 minutes.
- Serve by spooning the baked cheese onto a plate, and scatter with parsley and olives, before placing a poached egg on top. Drizzle with some more olive oil, and serve with bread.
