Baked Panko Zucchini Fries
- 115g panko breadcrumbs
- 60g seasoned flour
- 2 beaten eggs
- 2 large zucchini
- Preheat the oven to 180C. Place the breadcrumbs, eggs and flour into three separate shallow bowls.
- Cut the zucchini into batons, then lightly coat in the flour, dip in the egg and roll in the panko breadcrumbs until well covered. Place on a baking tray and bake for 20 mins, or until golden and crisp. Season with sea salt and pepper, and serve warm with mayo or other dipping sauces.
