Baked Panko Zucchini Fries

  • 115g panko breadcrumbs
  • 60g seasoned flour
  • 2 beaten eggs
  • 2 large zucchini
  • Preheat the oven to 180C. Place the breadcrumbs, eggs and flour into three separate shallow bowls.
  • Cut the zucchini into batons, then lightly coat in the flour, dip in the egg and roll in the panko breadcrumbs until well covered. Place on a baking tray and bake for 20 mins, or until golden and crisp. Season with sea salt and pepper, and serve warm with mayo or other dipping sauces.
