Baked Pork Chops with Sticky Glaze

  • 1 tbsp olive oil
  • 2 thick pork chops
  • 4 tbsp smooth orange marmalade
  • 2 tbsp honey
  • Blanched snow peas, to serve
  • Sweet potato mash, to serve
  • Preheat the oven to 200C. Heat an ovenproof pan, drizzle the chops with the oil and season liberally. Cook the chops on the fatty end for 2 mins, then cook on each side for 2 mins or until golden. Mix the marmalade and honey, and spoon all over the chops.
  • Place the glazed pork chops in the oven and roast for 8 mins. Baste well with the glaze and juices, then transfer to a plate and leave to rest for 5 mins. Serve with blanched snow peas, sweet potato mash and a drizzle of pan juices.
