Baked Scallops
- 2 scallops, cleaned and left in shell
- 25g butter, melted
- 1⁄2 red chilli, chopped
- 50g breadcrumbs
- Salt and pepper
- Handful of watercress or rocket
- Preheat your grill. Place the scallops on a baking sheet, and top with the butter, chilli, breadcrumbs, and plenty of seasoning.
- Place under the grill for about 3 or 4 minutes, or until just golden. Serve with a big handful of watercress or rocket, and enjoy.
