Balsamic Grilled Chicken Breast

  • 60ml balsamic vinegar
  • 3 tbsp olive oil
  • 2 tbsp brown sugar
  • 3 crushed garlic cloves
  • 1 tsp each dried thyme and rosemary
  • 4 chicken breasts
  • Chopped parsley, to serve
  • Mix together the vinegar, olive oil, sugar, herbs, garlic and some seasoning. Add the chicken breasts to the bowl, and toss to coat. Leave to marinate for at least 30 mins, preferably longer.
  • Preheat the grill to medium, and grill the breasts - basting with the remaining marinade regularly - until cooked through, roughly 6 mins on each side. Scatter with parsley, and serve with a green salad.
