Balsamic Strawberry and Halloumi Salad

  • 100g strawberries
  • 1 tbsp balsamic vinegar
  • 150g sliced halloumi
  • 20g pine nuts
  • 1 cucumber, chopped
  • 10g basil leaves
  • 10g mint leaves
  • Olive oil
  • Slice the strawberries and chuck into a bowl with the vinegar. Leave to one side. Meanwhile, griddle the halloumi slices until charred, and toast the pine nuts. Slice the herbs and peel the cucumber into ribbons.
  • Arrange the cucumber ribbons on a serving plate, and top with the halloumi and scattered strawberries. Add a good glug of olive oil to the reserved balsamic vinegar, whisk with a fork and drizzle all over the salad. Scatter with herbs and the toasted pine nuts, season, and serve.
