Balsamic Strawberry and Halloumi Salad
- 100g strawberries
- 1 tbsp balsamic vinegar
- 150g sliced halloumi
- 20g pine nuts
- 1 cucumber, chopped
- 10g basil leaves
- 10g mint leaves
- Olive oil
- Slice the strawberries and chuck into a bowl with the vinegar. Leave to one side. Meanwhile, griddle the halloumi slices until charred, and toast the pine nuts. Slice the herbs and peel the cucumber into ribbons.
- Arrange the cucumber ribbons on a serving plate, and top with the halloumi and scattered strawberries. Add a good glug of olive oil to the reserved balsamic vinegar, whisk with a fork and drizzle all over the salad. Scatter with herbs and the toasted pine nuts, season, and serve.
