Bangers ‘n’ Ratatouille

  • 1 onion, cut into thin wedges
  • 3 courgettes, cut into bite-sized pieces
  • 1 red pepper, chopped into bite-size pieces
  • 3 tbsp olive oil
  • 8 quality pork sausages, Lincolnshire recommended
  • 2 crushed garlic cloves
  • 400g tin of chopped tomatoes
  • Preheat the oven to 220C. Pop the courgette, onion, and pepper into a baking dish in a single layer. Drizzle with 2 tbsp olive oil and season well, then cook in the oven for 20 mins or so.
  • Meanwhile, fry the sausages in a pan for 5 mins to brown all over. Stir the chopped tomatoes and garlic into your vegetables, season again, and place the sausages on top. Cook for another 20 mins, then serve with crusty bread.
