Barbecued Chicken in Chunky Tomato Sauce
- 1 chicken thigh or leg, barbecued
- 2 tbsp olive oil
- 1⁄2 onion, chopped
- 1 chopped garlic clove
- 200g cherry tomatoes, halved
- 1 tsp red wine vinegar
- 2 tsp sugar
- 1 tbsp tomato ketchup
- 1 tbsp tomato puree
- Small handful of chopped basil
- Salt and pepper
- Heat the olive oil in a small saucepan, and gently fry the onion for 3 mins. Add the garlic, and fry for one minute more. Add the tomatoes, fry for 2 minutes, then add the sugar, vinegar, ketchup, and puree, and simmer for 5 minutes.
- Stir in the basil, season to taste, then spoon all over the barbecued chicken. Serve with flatbreads and your choice of greens.
