Barbecued Chicken in Chunky Tomato Sauce

  • 1 chicken thigh or leg, barbecued
  • 2 tbsp olive oil
  • 1⁄2 onion, chopped
  • 1 chopped garlic clove
  • 200g cherry tomatoes, halved
  • 1 tsp red wine vinegar
  • 2 tsp sugar
  • 1 tbsp tomato ketchup
  • 1 tbsp tomato puree
  • Small handful of chopped basil
  • Salt and pepper
  • Heat the olive oil in a small saucepan, and gently fry the onion for 3 mins. Add the garlic, and fry for one minute more. Add the tomatoes, fry for 2 minutes, then add the sugar, vinegar, ketchup, and puree, and simmer for 5 minutes.
  • Stir in the basil, season to taste, then spoon all over the barbecued chicken. Serve with flatbreads and your choice of greens.
