BBQ Hunter’s Chicken

  • 1 tbsp veg oil
  • 2 chicken breasts
  • 4 rashers of smoked bacon
  • 1 sliced red onion
  • ½ pack of green beans, trimmed
  • 2 sliced carrots
  • 50ml quality BBQ sauce
  • 25g parmesan, grated
  • Mustard mash, to serve
  • Preheat the oven to 200C. Oil a tray and place the seasoned chicken breasts onto it, before covering each with 2 rashers of bacon. Cook in the oven for 20-25 mins, or until cooked through.
  • Meanwhile, fry the onion in about 1 tbsp of oil until golden and slightly caramelised, then set aside. Boil the beans and carrots for 8 mins until al dente, then pour the BBQ sauce over the chicken breasts, scatter with parmesan and return to the oven for 3 mins. Serve with mustardy mashed potatoes, the boiled vegetables, and a big tangle of caramelised onions. Comfort food at its best!
