BBQ Lobster with Ginger Butter

  • 3 spring onions, green and white parts divided
  • 300g softened butter
  • 3 tbsp grated ginger
  • Olive oil
  • 6 lobster tails, halved lengthways
  • 400g green beans
  • 1 tbsp toasted sesame seeds
  • 1 limes
  • Chilli flakes
  • Get your barbecue glowing. Chop the whites of the spring onions and mix with the butter, ginger and a pinch of sea salt. Transfer half the mixture to a serving dish, reserve the rest. Brush the lobster tails with oil and barbecue, cut side down, for 3 mins. Flip and brush with the reserved butter mixture and cook for 3 mins more, then transfer to a serving plate and cover.
  • Toss the beans with a splash of oil and barbecue for 5 mins, then season and set aside. Chop the greens of the spring onions, sprinkle with sesame seeds and scatter over the lobster tails. Add a squeeze of lime and sprinkle with chilli flakes. Serve with the ginger butter mixture for added indulgence, and enjoy.
