BBQ Lobster with Ginger Butter
- 3 spring onions, green and white parts divided
- 300g softened butter
- 3 tbsp grated ginger
- Olive oil
- 6 lobster tails, halved lengthways
- 400g green beans
- 1 tbsp toasted sesame seeds
- 1 limes
- Chilli flakes
- Get your barbecue glowing. Chop the whites of the spring onions and mix with the butter, ginger and a pinch of sea salt. Transfer half the mixture to a serving dish, reserve the rest. Brush the lobster tails with oil and barbecue, cut side down, for 3 mins. Flip and brush with the reserved butter mixture and cook for 3 mins more, then transfer to a serving plate and cover.
- Toss the beans with a splash of oil and barbecue for 5 mins, then season and set aside. Chop the greens of the spring onions, sprinkle with sesame seeds and scatter over the lobster tails. Add a squeeze of lime and sprinkle with chilli flakes. Serve with the ginger butter mixture for added indulgence, and enjoy.
