Beef and Chipotle Stir-Fry
- 1 tbsp oil
- 400g beef stir-fry steak, cut into strips
- 1 red onion, cut into wedges
- 30g chopped coriander, leaves and stalks separated
- 50g chipotle paste
- 3 tbsp tomato puree
- 400g tin of cannellini beans, drained
- Add the oil to a large frying and pan and stir-fry the beef and onion for about 5 mins. Add the chopped coriander stalks to the pan with the chipotle paste and tomato puree, along with a few splashes of water to loosen the sauce. Bring the mixture to a simmer.
- Stir the cannellini beans into the stew and season well. Cook for about 3 mins or until piping hot, then stir through the chopped coriander leaves and serve with tortilla chips for dipping.
