Beef and Chorizo Goulash
- 1 tbsp oil
- Knob of butter
- 700g beef sausages, chopped
- 300g spicy chorizo sausage, chopped
- 2 sliced onion
- 1 chopped garlic clove
- 2 tbsp flour
- 1 tbsp smoked paprika
- 2 chopped red chillies
- 1 red pepper, chopped
- 200ml beef stock
- 150ml soured cream
- 1 tbsp chopped parsley
- Rice or pasta, to serve
- Preheat the oven to 150C. Heat the butter and oil in an ovenproof frying pan and fry the sausages for 6 mins or until browned all over, then remove and set aside. Add the garlic and onions to the same pan and cook for 3 mins, then stir in the flour and paprika and cook for another 3 mins.
- Add the chillies and red pepper to the pan, stir well to combine, then pour in the stock and return the sausages to the mixture. Place in the oven for 30 mins, then remove and skim off the excess fat. Stir in the parsley and cream, then serve with rice, pasta or crusty bread.
