Beef and Veggie Burgers
- 2 tbsp oil
- 1 crushed garlic clove
- 1 chopped onion
- 100g grated zucchini
- 1 grated carrot
- 50g finely chopped mushrooms
- ¼ bunch of chopped parsley
- 75g grated cheddar
- 1 egg, beaten
- 5 tbsp breadcrumbs
- 250g quality beef mince
- 4 burger buns
- Salads and relishes, etc, to serve
- Heat 1 tbsp of oil in a frying pan, and cook the vegetables with the parsley for 8 mins, seasoning to taste as you go, until softened. Set aside to cool. When ready, mix the vegetables, cheese, breadcrumbs, meat and egg with some seasoning to combine, then form into 4 patties.
- Heat the remaining oil in a pan, and cook the patties for 4 mins on each side until cooked through and browned all over. Stuff into burger buns with all your favourite sauces, and enjoy with a big pile of chips. Nice!
