Beef Fajitas Recipe
What you'll need
- 4 decent beef steaks (rib-eye is best for this) about 250g each
- 8 flour tortillas, and whatever sides you fancy
- 150ml sour cream
For the marinade
- Juice of 6 limes
- 2 tbsp olive oil
- 4 crushed garlic cloves
- 2 tsp dried oregano
- 4 tsp dried cumin
- 2 tsp black pepper
- Small bunch of coriander, chopped
Time: 10 mins
Serves: 4
Method
First
Mix together all of the marinade ingredients in a bowl, and lay the steaks on a shallow dish, and cover well with the marinade (turn them over several times to get the meat well coated). Leave to stand for at least an hour.
Second
Get your barbecue fired up, or use a hot grill or griddle pan if you’re indoors. Cook the steak for 3 minutes on each side for medium, or a little longer if you like your steaks well done. Leave to rest for 5 minutes, then slice thickly.
Third
Warm your flour tortillas in the oven or over the barbecue. Assemble your fajitas by spreading some mashed beans or similar on the tortilla, topping with the steak, and then some sour cream, guacamole, and coriander. Roll up, bite down, and enjoy!
