Beef Kofta with Spicy Tomato Sauce
- 750g steak mince
- 2 tbsp Moroccan spice paste
- 2 tbsp couscous
- 1 grated onion
- 2 grated garlic cloves
- Handful of mint and coriander, chopped
- Pitta, to serve
- 8 skewers
- For the Sauces
- 2 tbsp olive oil
- 2 chopped garlic cloves
- Pinch of chilli flakes and cinnamon
- Pinch of sugar
- 1 tbsp tomato puree
- 2 x 400g tins of chopped tomatoes with herbs
- Mix the beef, spice paste, couscous, garlic, onion and herbs in a bowl. Season well and form into 32 meatballs. Thread 4 balls onto each of your skewers, then leave to chill in the fridge.
- Meanwhile, make the sauce by cooking the garlic in the oil for 30 seconds. Add all the remaining ingredients and cook for 10 mins, seasoning to taste. Heat a griddle pan and cook the skewers for 5 mins on each side. Scatter the kofta with extra herbs and serve with more herbs and grilled pitta.
