Beef Meatball Skewers

  • 750g beef mince
  • 3 chopped spring onions
  • 50g fresh breadcrumbs
  • 30g grated parmesan
  • 1 beaten egg
  • ½ tsp dried Italian herbs
  • ½ tsp smoked paprika
  • 2 tbsp tomato ketchup
  • For the Dipping Sauce
  • 40g ketchup
  • 40g smoky barbecue sauce
  • Preheat the grill to high. Place the mince in a mixing bowl and add all the other ingredients. Season well, shape into 12 balls with damp hands, then thread the balls onto 6 skewers. Place the skewers onto a foil-lined tray and grill for 20 mins, turning occasionally until golden and cooked through.
  • Combine the ketchup and barbecue sauce, and either drizzle over the meatballs to serve, or enjoy as a dipping sauce to have on the side.
