Beef ‘n’ Peas Pilaf
- 1 tbsp olive oil
- 1 chopped onion
- 3 chopped garlic cloves
- 1⁄2 tbsp cumin seeds
- 1 chilli, chopped
- 250g beef mince
- 25g butter
- 200g rice
- 1 litre of hot beef stock
- 300g frozen peas
- Salt and pepper
- Heat the olive oil in a large saucepan, and toss in the onion to soften for a couple of minutes. Add the garlic, cumin seeds, chilli, and a pinch of salt, and cook for a few more minutes. Add the beef mince, and fry for 5 minutes, or until browned.
- Add the butter to your saucepan, and once it has melted, tip in the rice. Mix over the heat for a couple of minutes, allowing the rice to absorb some of the juices, then add the stock, cover with a lid, and cook for 5 minutes. After 5 minutes, add the peas and stir through. Continue cooking on a low heat until the rice is tender, then serve. Nice!
