Beef, Red Pepper/Capsicum, and Carrot Burgers
- 2 tbsp olive oil
- 1 red pepper/capsicum, quartered
- 400g steak mince
- 1 egg
- 1 grated carrot
- 50g breadcrumbs
- 40g cheddar, sliced
- Buns and pickles, to serve
- Heat the oven to 200C. Put the pepper/capsicum quarters on a baking tray, and rub with ½ tbsp olive oil. Roast for 30 mins, turning once. Remove and finely chop. Tip the mince, egg, carrot, red pepper/capsicum, and breadcrumbs into a mixing bowl, and season well. With damp hands, shape into six patties.
- Heat the remaining oil in a frying pan, and fry the burgers for 6 mins on each side, or until browned and cooked to your liking. Top with the cheddar slices, and serve in buns with pickles and all your favourite sides.
