Beef with Blue Cheese Butter
- 1 x 100g beef fillet
- 1 tbsp olive oil
- Salt and pepper
- 25g blue cheese, crumbled
- 1 tbsp softened butter
- Handful of fresh sage, parsley, and chives, chopped
- 1 tsp mustard
- Cooked cabbage and mushrooms, to serve
- Rub the beef fillet with salt, pepper, and olive oil, and griddle for 3 minutes on each side, or until cooked to your liking. Leave to rest.
- Make your blue cheese butter by mixing together the cheese, butter, herbs, and mustard in a bowl until combined. Serve the beef on a bed of cabbage and mushrooms, topped with the butter. Perfect!
