Beef with Blue Cheese Butter

  • 1 x 100g beef fillet
  • 1 tbsp olive oil
  • Salt and pepper
  • 25g blue cheese, crumbled
  • 1 tbsp softened butter
  • Handful of fresh sage, parsley, and chives, chopped
  • 1 tsp mustard
  • Cooked cabbage and mushrooms, to serve
  • Rub the beef fillet with salt, pepper, and olive oil, and griddle for 3 minutes on each side, or until cooked to your liking. Leave to rest.
  • Make your blue cheese butter by mixing together the cheese, butter, herbs, and mustard in a bowl until combined. Serve the beef on a bed of cabbage and mushrooms, topped with the butter. Perfect!
