Best Ever Baba Ganoush

  • 2 eggplants, peeled and chopped
  • 6 tbsp olive oil
  • ½ red onion, chopped very finely
  • 2 crushed garlic cloves
  • 1 bunch of basil
  • Splash of olive oil
  • 1 ciabatta loaf
  • Heat the oil in a frying pan, and add the onion and eggplant together and fry for 15 mins to soften. Add the garlic, and fry for 2 mins more. Season liberally. Meanwhile, brush slices of ciabatta with olive oil, and griddle the slices for 2 mins on each side, or until charred.
  • Place all of the eggplant mixture into a food processor along with the basil, and another splash of oil. Blend to a rough paste, and pour into a bowl. Serve immediately with the griddled bread - the perfect side dish!
