Best Ever Fish Burgers

  • 250g firm white fish fillets, chopped
  • 50g white breadcrumbs
  • 1 egg, beaten
  • 1⁄2 lime, zest and juice
  • 1 crushed garlic clove
  • 2 tbsp coriander, chopped
  • 2 tsp soy sauce
  • 1 tbsp veg oil
  • Salt and pepper
  • Breadcrumbs to coat
  • Sesame seeds to coat
  • Buns and tartare sauce, to serve
  • Place the fish in a food processor and blitz to a paste. Transfer to a bowl and add the breadcrumbs, egg, lime zest and juice, garlic, coriander, and soy. Season well, then form into two large patties before sticking in the freezer for 10 minutes to firm up.
  • Mix the breadcrumbs and sesame seeds to make your crust, then turn the burgers in the mixture to cover. Fry in veg oil for 2 minutes on each side, or until golden and cooked through. Serve in buns with lettuce and tartare sauce.
