Best Ever Garlic Mushrooms

  • 2 tbsp olive oil
  • 4 sliced garlic cloves
  • 500g mixed mushrooms, halved or sliced
  • 2 tbsp sherry or red wine vinegar
  • Salt and pepper
  • Olive oil, to drizzle
  • Hot paprika, to garnish
  • Small bunch of parsley, chopped, to garnish
  • Heat the olive oil in a large pan, then add the garlic and fry for 1 minute. Add the mushrooms, and fry on a high heat until the mushrooms are just browned. Season well with salt and pepper, and add 2 tbsp of vinegar. Continue to cook until the liquid is evaporated, then serve with a drizzle of olive oil, and sprinkle of paprika, and plenty of chopped parsley. Perfect on toast, or as a side for a steak.
