Best Ever Halloumi Wraps
- 1 tbsp mild curry powder
- 2 tbsp greek yoghurt
- 1⁄2 lemon, juice only
- 1 tbsp olive oil
- 250g halloumi, cut into bite size pieces
- 4 seeded tortilla wraps
- 2 tbsp mango chutney
- 1 baby lettuce, shredded
- Mint and cucumber raita, to serve
- Combine the curry, yoghurt, lemon, and olive oil in a bowl, and coat the halloumi. Chill in the fridge for an hour, then preheat your grill and thread the halloumi onto metal skewers. Grill for 7 minutes, turning regularly until golden and lightly charred.
- Warm the wraps for 20 secs in a microwave, then fill with halloumi, lettuce, chutney and raita. Yes!
