Best Ever Halloumi Wraps

  • 1 tbsp mild curry powder
  • 2 tbsp greek yoghurt
  • 1⁄2 lemon, juice only
  • 1 tbsp olive oil
  • 250g halloumi, cut into bite size pieces
  • 4 seeded tortilla wraps
  • 2 tbsp mango chutney
  • 1 baby lettuce, shredded
  • Mint and cucumber raita, to serve
  • Combine the curry, yoghurt, lemon, and olive oil in a bowl, and coat the halloumi. Chill in the fridge for an hour, then preheat your grill and thread the halloumi onto metal skewers. Grill for 7 minutes, turning regularly until golden and lightly charred.
  • Warm the wraps for 20 secs in a microwave, then fill with halloumi, lettuce, chutney and raita. Yes!
