Best-Ever Lobster Thermidor
- 1 lobster, cooked
- 20g parmesan, grated
- French fries, to serve
- 25g butter
- 1 shallot, finely chopped
- 275ml fish stock
- 55ml white wine
- 110ml heavy cream
- 1⁄2 tsp hot mustard
- 2 tbsp chopped parsley
- 1⁄2 lemon, juice only
- Salt and pepper
- Preheat your grill to medium. Cut the lobster in half and remove the meat from the tail, head, and claws. Chop the meat into pieces, and place back into the shell.
- Make the sauce by melting the butter in a pan, and softening the shallots. Pour in the stock, wine, and cream, and bring to a low boil. Reduce by half, stirring occasionally, then add the herbs, mustard, and lemon juice, and season to taste. Spoon the thick, creamy sauce over the lobster meat, sprinkle with parmesan, and grill for 4 minutes. Serve with French fries - wow!
