Black Bean and Smoky Pork Tacos
- 2 tsp veg oil
- 1/2 red onion, chopped
- 2 tsp ground cumin
- 2 tsp smoked paprika
- 500g pork mince
- 300ml quality passata
- 5 tbsp barbecue sauce
- 400g tin of black beans, drained
- small bunch of coriander, chopped
- 8 taco shells
- Heat the oil in a frying pan, and cook the onion for about 5 mins to soften. Sprinkle with the spices, cook for a minute more, then add the pork mince to brown all over.
- Pour in the passata and barbecue sauce with 4 tbsp of water, and simmer until reduced and glossy. Add the beans, season liberally, then stir in the coriander. Warm the taco shells, then stuff with the pork mixture and any extras you fancy!
