Blackened Salmon with Bean Salsa
- 3 tbsp Cajun seasoning
- 1 tsp dried oregano
- 4 salmon fillets
- Sunflower oil, to brush
- 400g tin of black-eyed beans, drained
- 2 tbsp olive oil
- 1 avocado, cubed
- 2 plum tomatoes, chopped
- 1 red pepper, chopped
- 2 tbsp lime juice
- Salt and pepper
- Mix together the seasoning and oregano in a bowl, and rub it all over the salmon with the oil. Set aside, and make the salsa by mixing all the ingredients together in a bowl with plenty of seasoning.
- Heat up a frying pan with a little oil, then fry the fish fillets for 5 minutes on each side, making sure the flesh gets nicely charred with the rub. Slice the salmon on a plate, and spoon the salsa over the top.
