Blackened Salmon with Bean Salsa

  • 3 tbsp Cajun seasoning
  • 1 tsp dried oregano
  • 4 salmon fillets
  • Sunflower oil, to brush
  • 400g tin of black-eyed beans, drained
  • 2 tbsp olive oil
  • 1 avocado, cubed
  • 2 plum tomatoes, chopped
  • 1 red pepper, chopped
  • 2 tbsp lime juice
  • Salt and pepper
  • Mix together the seasoning and oregano in a bowl, and rub it all over the salmon with the oil. Set aside, and make the salsa by mixing all the ingredients together in a bowl with plenty of seasoning.
  • Heat up a frying pan with a little oil, then fry the fish fillets for 5 minutes on each side, making sure the flesh gets nicely charred with the rub. Slice the salmon on a plate, and spoon the salsa over the top.
