Blue Cheese Mushrooms with Cranberry Relish
- 300ml veg oil, for deep frying
- 40 mushrooms
- 100g flour
- 200g crumbly blue cheese
- 3 eggs, beaten
- 100g breadcrumbs
- For the Cranberry Relish
- 2 tbsp olive oil
- 1 chopped onion
- 4 tbsp red wine vinegar
- 6 tbsp brown sugar
- 100g cranberries
- Remove the stalks from the mushrooms and discard. Pop a spoonful of crumbled blue cheese onto each mushroom, where the stalk used to be. Place the flour, egg, and breadcrumbs into 3 bowls, and dip each mushroom into them in turn, before deep frying for 3-4 minutes or until golden. Drain on kitchen paper
- Make your cranberry relish by heating the oil in a saucepan, and placing the onion, vinegar, cranberries and sugar into it and cooking for 5 minutes to combine. Serve in a dipping bowl next to your pile of crispy, cheesy fried mushrooms!
