Blue Cheese Welsh Rarebit
- 1 egg yolk
- 85g strong blue cheese
- 3 tbsp double cream
- 1 tsp dijon mustard
- Dash of worcestershire sauce
- Salt and pepper
- 2 slices of sourdough, griddled
- Preheat your grill to a medium setting. Pop all of the ingredients, apart from the bread, into a food processor, and blitz until combined. Spread it liberally onto the griddled bread, stick it under the grill, and give it 5 minutes to go golden and bubbly. Eat nice and hot.
