Blue Cheese Welsh Rarebit

  • 1 egg yolk
  • 85g strong blue cheese
  • 3 tbsp double cream
  • 1 tsp dijon mustard
  • Dash of worcestershire sauce
  • Salt and pepper
  • 2 slices of sourdough, griddled
  • Preheat your grill to a medium setting. Pop all of the ingredients, apart from the bread, into a food processor, and blitz until combined. Spread it liberally onto the griddled bread, stick it under the grill, and give it 5 minutes to go golden and bubbly. Eat nice and hot.
